TEAM

Our daily operations are overseen by General Manager Marcelina Kocimska, who has been with the brand for years and is dedicated to ensuring the highest standards of service. Ed Red was conceived by Grzegorz Kłos, who has been developing the concept from the very beginning, focusing on high-quality meat, excellent ingredients, and a modern approach to Polish cuisine.

Przemek Skibiński

A slow food enthusiast, perfectionist, and expert in meat processing and dry-aging techniques. A Poznań native by birth, he is a chef by both education and family tradition.

He began his career at the Pod Koziołkami and Brovaria restaurants in Poznań. After moving to Kraków, he worked with Hotel pod Różą, the Copernicus and Szara restaurants, and later Ancora, where he honed his culinary skills under the guidance of Adam Chrząstowski. In 2015, he joined Ed Red, taking on the role of head chef.

Pod Baranami Palace

Make yourself at home on the ground floor of the 16th-century Pod Baranami Palace – one of Krakow's most significant and beautiful landmarks. Beneath historic vaulted ceilings, within the former palace interiors once frequented by kings and aristocrats, we have created the perfect space for your meetings.
